Perfect DIY dinner

This is my favourite DIY dish! It is perfect for a light and fresh dinner. Every time we’re out for some Chinese food I’m having crispy duck with pancakes and this one here is my twist on the crispy duck dish (much healthier though!)

All you need is:

king prawns, pan fried with garlic and ginger (Quantity is up to you, I would normally us around 300-400 grams for two people). Fry it on a hot pan for about 4-5 minutes

In separate hob:

4-5 “heads” of baby bok choy (OR 2 heads of large bok choy)

2 fresh chillies

Pan fry the bok choy with chillies for 4 minutes, at the and add lemon juice

In a salad bowl mix:

2 cups of Mung Bean Sprouts

1 cup cucumber – peeled and sliced

1 cup of carrots – grated

Mix it with olive oil and soya sauce

For the pancakes:

Frozen Chinese Crispy Duck Pancakes (You can find them in your local Chinese/Oriental market, pack of 50 wont cost you more thank £3)

To cook, simply thaw the pancakes and heat in a steamer for 4-5 minutes or heat a small pack of 6 in the microwave on a low heat for 30 seconds
