Hello Monday!
This salad reminds me of Christmas, smells amazing and it’s delicious.
All you need is:
4 beetroots, sprinkle with olive oil and black pepper, roast it in the oven for 30 minutes.
1 butternut squash, slice it and roast with the beetroot for 30 minutes
1 tin of chickpeas
1 blood orange, sliced
Walnuts halves
Feta cheese is optional but it goes really well
Add some parsley and bazil on top and enjoy!
