Salmon with home pickles, salad and peanut dressing

The joy of making your own pickles.

It’s so easy to make and takes so little time. The idea is to keep it fresh with that zingy after taste.

This dish is kinda thai with a little twist.

All you need is

Filet of salmon, pan fried skin down for 5 minutes.  Keep it pink inside

Salad:

Shedded Chinese

cabbage

Baby spinach

Sprinkle with olive oil and lemon

Pickles:

One carrot

One cucumber

One white onion

One green pepper

Pickle mix:

200 ml of hot water

200 ml of white rice vinegar

3table spoons of light soy sauce

5 table spoons of sugar

Mix it all together and put your vegetables in to the bowl. Cover with the pickle mix and put to the fridge for 20 minutes. Drain the water out of the vegetables.

Peanut sauce:

Soft Peanut butter

Sushi seasoning sauce

Rice vinegar

Soy sauce

Lemon

Plate up and enjoy!

Sweet and healthy!

There’s a lot going on in my life at the moment. Plenty to do and to think about…

We all have cravings. I love chocolate and berries and… oh well, let’s be honest I love sweets! I could eat everything maybe except liquorice (sic!) But from yogurts to all sorts of puddings,  chocolates to icecreams…

That doesn’t really go well with healthy diet. But this one here does!

All you need is:

Greek yogurt

Unsalted pistachio nuts

Hazelnuts

Berries, I used frozen mix of berries

Dark chocolate

Irish marmalade (thanks Jason;)

Enjoy!

Summer on a plate!

Three more sleeps.

Yes, three more sleeps and I’ll be in the sun.
Long walks, shades on and two big heads soaking up the beautiful sun!

I love food, it makes me happy. Everyone that knows me also knows that I love cooking and making food look pretty delicious. 

All you need for this on is:

Mix salad

2 small courgettes,  pan fry with spoon of olive oil and garlic

6 baby tomatoes,  pan fry with courgettes

3 fresh figs

Goat cheese

Smoked macrel

For the dressing, mix some olive oil, dill and pesto. Get some lemon on top and enjoy!

Prawns in peanut sauce on rice noodles

After my ‘eventful’ weekend I have to make myself healthy again;)

Tonight on the menu, prawns with vegs and rice noodles.

All you need is:

250 grams of prawns

Package of Asparagus

Spingonions

Half of small Chinese cabbage

Green curry paste

Peanut sauce

Rice noodles

Method:

Pre heat your wok, add your curry paste and prawns. Fry for 5 minutes then add the vegetables. Fry for another 5 minutes and add peanut sause.
Serve with rice noodles.

Enjoy!

Hot green thai with rice noodles

Bowl of deliciousness. 

The only way I can describe it is bowl of deliciousness.

Combination of garlic and thai curry paste, coconut milk and mellow prawns.

All you need is:

Green thai curry paste

4 cloves of garlic

2 onions

Fresh ginger

Fresh chilly

Baby corn

Green beans

Pea shouts

Broccoli

Spring onion

Prawns

Coconut milk

Lemon

Salt

Olive oil

Rice noodles

Method:

Pre heat your wok to maximum, add olive oil and all the spoces together with the paste.
Fry for few minutes, then add the vegetables but don’t leave it for too long. Add your prawns and coconut milk and simmer for further 5 minutes. sprinkle with salt and lemon and serve with rice noodles.

Enjoy!

Mussels in white wine sauce

This reminds me of holidays.

Smell of the sea, Mediterranean food and wine. In the case white wine sauce.
In less than three weeks I’ll be on the beach,  sipping martini and eating olives. That beach body is so in progress and I just couldn’t resist mussels in white wine sauce.

All you need is:

500 grams of fresh,  preferably live mussels

2 cups of dry white wine

4 Shallots, chopped

4 garlic cloves, chopped

Salt

Olive oil

Method:

Rinse and scrub mussels,
In large pan pot set on medium heat fry you shallots and garlic,  let it simmer for 5 minutes then add wine.
Add mussels and increase the heat to maximum,  cook until open.

Enjoy with a glass of white.
